600g cake_xo Lemon Cake Mix
3/4 cup (180ml) vegetable oil (or melted butter)
1 cup (250ml) milk (or plant-based milk for a dairy-free option)
3 large eggs (or egg substitute for a vegan option)
Optional: Add-ins like poppy seeds, or dried fruits if desired.

Baking tin or cupcake tray, Baking tin liner or Cupcake liners, Oven, Toothpick or cake tester & Cooling rack
Baking times
For a 2-layer 8-inch cake: Divide the batter evenly between two 8-inch round pans. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
For cupcakes: Fill cupcake liners ⅔ full. Bake for 18–22 minutes.
For a loaf cake: Pour the batter into a prepared loaf pan. Bake for 45–55 minutes.

Baking Instructions (600g Lemon Cake Mix)
1. Preheat Oven: Preheat your oven to 180°C (350°F). Grease and line your baking tin or cupcake tray.
2. Combine Wet Ingredients:
180ml (3/4 cup) vegetable oil (or melted butter for a richer flavour)
250ml (1 cup) milk (or plant-based milk for a dairy-free option)
3 large eggs (or egg substitute for a vegan option)
Whisk together until smooth.
3. Add Dry Mix: Gradually add the 600g of lemon cake mix to the wet ingredients. Mix gently until the batter is smooth and well combined. Do not overmix.
4. Optional Add-Ins: Fold in any desired add-ins, such as poppy seeds, or dried fruit.
5. Bake: Pour the batter into the prepared tin or cupcake liners.

6. Cool and Decorate: Allow the cake or cupcakes to cool completely before decorating or serving.
